Food Is Our Friend

Spring is here, and that means it’s time to ditch your winter coats, smell the roses and, of course, cook up some tasty treats in the kitchen. This month, we’ve got a mouth-watering recipe for Warm Spinach, Bean and Bacon Salad With Maple Dressing that’ll not only put a little pep in your step this Spring, but these sources of antioxidants wil also block harmful blue light and prevent it from damaging the back of your retina…we like to call it our “natural sunglasses.”

 

 

Leafy green veggies like spinach, broccoli, green beans and brussel sprouts are all excellent sources of Lutein, Zeaxanthin, Vitamin A, Vitamin E and Vitamin C. And here’s something you may not know – lightly cooking these veggies, instead of eating them raw, makes it easier for your body to absorb the nutrients. So whip out your spatulas and get cooking…this is the perfect side dish for a Spring barbecue! 

 

 

 

Warm Spinach, Bean and Bacon Salad With Maple Dressing (Serves 4)

(Rich in lutein, vitamin A, vitamin E and vitamin C)

 

Ingredients:

450g Spinach

225g Lean Bacon (chopped)

Handful of French Beans

3 Tablespoons, Chopped Walnuts

Raspberry Vinegar

Maple Syrup

Sunflower Oil

 

Directions:

Chop the French beans in half, boil until just tender, drain and refresh with cold water. Heat a non-stick pan, add the bacon and fry until golden and crisp. Remove from the pan and keep warm. To the pan add 2 tablespoons of sherry vinegar, 3 tablespoons of sunflower oil, the walnuts and a tablespoon of maple syrup. Tear the washed spinach into bite-sized pieces and add to the pan along with the cooked French beans. Stir until just wilted and then serve on warmed plates with the warm bacon scattered on top.

The art of images is something that’s been fascinating cinema buffs, culture enthusiasts and museumgoers for centuries. If you live in New York City or have a weekend getaway planned to the “City of Lights” soon, check out the ‘Real Virtuality’ exhibit at the Museum of Moving Image now through June 12th.

 

And while you’re already in the city – check out the state’s most infamous modern day art museum, the MoMA. From E. L. Kirchner to Max Beckmann, artists associated with German Expressionism used a variety of mediums, such as lithography and etching, to evoke emotion.  (Showcasing now through July 11, 2011)
